Abstract

Filamentous fungi are important in microbial lipid production. It generally can reach high biomass concentration during fermentation. Currently, functional lipid production from filamentous fungi has been commercialized as it can be sold in high price, which is much higher than its production cost. However, the lipid production from filamentous fungi with low price is still under research stage. It would be possible to go to practice when the production cost is reduced. It means that the high lipid productivity, low production cost, and preventing contamination have to be achieved. In this chapter, the strategies to improve lipid production from filamentous fungi have been introduced from the aspects of cultivation, fermentation, and extraction. Moreover, the current development of lipid from filamentous fungi has also been summarized.
