Abstract
This study investigated the impact of electrocatalytic time on the physicochemical properties of rice bran protein (RBP). The subunit of RBP was not destroyed by electrocatalytic treatment. Raman spectroscopy showed that the increase of electrocatalytic time would cause the content of α-helices structure to decrease first and then increase, while the content of β-turns and random coils showed the opposite trend. Meanwhile, Tyr residue was first exposed and then embedded, which also reduced the g-g-g content in the disulfide bond (S–S). Moreover, the side chain groups of tryptophan (Trp) molecules were gradually exposed, and the surface hydrophobicity (H0) content of RBP increased after electrocatalytic treatment. Additionally, the emulsification and emulsification stability were increased by 17% and 14%. The foaming stability reached 85.38% after electrocatalytic treatment for 150 min and standing for 30 min. Finally, the morphological characterization showed that the RBP after electrocatalytic treatment presented a disordered and irregularly broken morphology.
