Abstract
Food quality management has become prevalent as food quality defect and scandal increasingly happens. Collaborative process management is important for food quality management since the production of food is increasingly involving multiple organizations. Based on the new emerging information gathering techniques (e.g., RFID), real-time information management is enabled through data flow. This paper proposes collaborative workflow management technique to address real-time food quality monitor problem in independent multi-stakeholder manufacture circumstances. This study is conducted following a design science research paradigm. Artifacts including quality management concepts and quality management models are built. Further, this paper evaluates the utility of the artifacts through a case study in milk industry. We conclude that this research contributes to quality management literature, and the artifacts can help practitioners to monitor food quality in real time.
