Abstract

In recent years, anticoagulant bioactive peptides have been isolated and identified from various food - derived proteins. The active mechanisms of food - derived anticoagulant peptides were mainly focused on three aspects, inhibition of thrombin, the coagulation factors other than thrombin, and platelet aggregation. However, the main in vitro analytical methods for verifying anticoagulant activity, such as spectrophotometry, chromogenic substrate method, activated partial thromboplastin time testing, thrombin time testing, prothrombin time testing, platelet aggregation assay are with both advantages and disadvantages. The active mechanisms of anticoagulant peptides and the corresponding detection methods were analyzed and summarized in this paper and to provide theoretical basis for the related research.
